Peanut Butter Cookies

Ever since the coconut oil trend began I have become obsessed.

I use coconut oil to make peanut butter cookies. Sounds weird, I know.. but this recipe is super easy and satisfies that craving for something sweet (allergic to peanut butter? Try cookie butter). These cookies are soft, flavorful, and even better when topped with a Hershey kiss. I followed this recipe but substituted the coconut oil for butter. Using the oil adds a healthier blend of fatty acids, making you feel less guilty and completely content.

 INGREDIENTS

  • 1/2 cup  coconut oil (softened) {or if you wish, unsalted butter}
  • 1 cup light brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 3/4 cup creamy peanut butter
  • 1 1/2 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/4 cup granulated sugar for rolling

 

DIRECTIONS

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. Cream coconut oil and brown sugar together until smooth.
  3.  Beat the egg, then add vanilla and peanut butter until combined.
  4. Pour in flour and baking soda and mix. Do not over mix!  Dough should be soft and sticky. Chill for 15 minutes minimum. 
  5. Prepare 1/4 cup of granulated sugar in a small bowl. Make 1″ balls of dough, roll in sugar and place on prepared baking sheet.
  6. Bake cookies for roughly 8 minutes. Allow to cool for 5 minutes and then move them from baking sheet! (Feel free to add a Hershey kiss on top!)
