Easy Apple Crisp

We are currently in (arguably) the most beautiful season of the year, autumn.

When I think of autumn, I dream of the vibrant New England foliage, the comfort of hot cider keeping me warm at football games, cider donuts coated in sugar, decorating the house with pumpkins, the crunching of leaves while taking a stroll, pumpkin spiced latte’s (yes I’m one of those girls…) and crisp fresh picked APPLES.

It is these things that make this season so special – the festivities and treats that celebrate nature’s finest goods. So let’s celebrate autumn by cooking in the kitchen.

The very first fall goodie that I had to make was (drum roll please) APPLE CRISP. Let’s face it everyone loves it (if you don’t there’s something wrong with you). This recipe is easy to make and will keep you warm on cold fall nights. The first bite of this apple crisp will make you crave for another serving.

*if you’re GLUTEN FREE- substitute the rolled oats for: (certified GF) rolled oats  & flour for: almond meal

 

INGREDIENTS

Filling:

  • 5-6 medium-large apples cut into chunks
  • 1 tablespoon lemon juice
  • 1 tablespoon flour
  • 1⁄2 cup sugar
  • 1/8 teaspoon salt

Topping:

  • 1 cup all-purpose flour
  • 1⁄2 cup rolled oats
  • 2/3 cup packed dark brown sugar
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 8 tablespoons (1 stick) unsalted butter, cut into 1/2-inch pieces and 
chilled

DIRECTIONS

Preheat oven to 350 degrees

  1. Make the filling: in a large bowl, combine the apples, lemon juice, flour and sugar- pour into buttered baking dish and set aside.
  2. For the topping: in a large bowl, mix the oats, flour, brown sugar, cinnamon and salt.
  3. Using a food processor (or fork or pastry blender), work the butter into the flour mixture. Mix until the butter is the size of peas. Sprinkle on top of the apples.
  4. Bake: until fruit is bubbling and the crisp is golden (45 mins)

Top with vanilla bean ice cream or homemade whipped cream!
